Maido, run by chef Mitsuharu “Micha” Tsumura, is one of the best-known addresses for Nikkei cuisine. Here, Peruvian ingredients meet Japanese cooking techniques. The multi-course menu combines, for example, fish from the Amazon, spices from the Andes and Peruvian chilies with sashimi and other Japanese dishes.

At Central by Virgilio Martínez and Pía León, much of the focus is on Peru’s different landscapes. The menu takes you through various altitudes – from the sea all the way to the Andes at over 4,000 meters above sea level. Along the way, you’ll encounter ingredients that you don’t find on every menu, including unique potato varieties, flowers and fruits from the Amazon region.

The restaurant is located in a modern, bright building complex surrounded by plenty of greenery. The concept also includes its own gardens, where different plants are grown and studied. The dishes themselves are also presented with great attention to detail. Central is one of the best restaurants in Miraflores and a good place to experience a different side of Peruvian cuisine. If you want to dine at Central, it’s best to plan well in advance, as tables are usually booked up well ahead of time.
